Mediterranean Cornbread From: The Secret Ingredient: Tasty Recipes with an Unusual Twist

Secret Ingredient: Olives
1 (6 oz.) pkg. cornbread mix
1/4 teaspoon garlic powder
1/8 teaspoon ground red pepper (optional)
2/3 cup milk
1 large egg, slightly beaten
1/2 cup shredded Cheddar cheese
1/2 cup sliced pimiento-stuffed green olives

Preheat oven to 375°. In a medium bowl, combine cornbread mix, garlic powder and pepper. In a small bowl, combine milk and egg. Stir egg mixture into cornbread mix just until moistened. Add cheese and olives; stirring until blended. Pour batter into a greased 8 x 4” loaf pan. Bake 25-30 minutes or until done. Cool in pan 5 before removing. Serve warm.
